■ "Toyoaki" Sake Made with "Shirome Rice," an Edo-Period Brand
It is said that around 1698 (the 11th year of the Genroku era), a man named Ushigome Chusaemon, who governed Miyuki Village in Musashi Province, encouraged the cultivation of a variety of rice with exceptional flavor, which later became known as "Shirome Rice."At the time, it was presented to the shogunate as Japan’s finest rice, and in the Meiji era, it was designated as rice for the Imperial Household Agency. However, due to the difficulty of cultivation, it disappeared after World War II. Yet, thanks to the long-standing efforts of Sakado, it has been revived. It now produces the exquisite flavor of the sake “Toyoaki.”
