About the Brewery
“Preserving tradition while continuing to evolve”
Maruyama Shuzo has been brewing sake since the early Meiji era, and the character of our sake has evolved with each passing era. This is because our policy has always been to produce sake that is not only of the highest quality but also “delicious.” Furthermore, while upholding the tradition of continuing to brew sake using the same local climate, the same brewery, and the same well water, our evolution and guiding principle is to consistently produce sake that is recognized as “delicious.”A major shift in this process of evolution occurred in 1998. Until then, we had entrusted the brewing to master brewers from the Nanbu and Echigo schools, but starting that year, we began brewing in-house with our own employees. This significantly altered the character of Maruyama Shuzo’s sake. “Preserving tradition while continuing to evolve”—this is how Maruyama Shuzo continues to evolve with the times.
